Pumpkin Pancakes with Hearts for Home Link Up

Hi everyone, it’s Heather from Golden Reflections Blog again! I love the fall season, more importantly I love anything Pumpkin this time of year! The other morning my brother and his girlfriend were over for breakfast, so I decided to whip up some very simple pumpkin pancakes for everyone! I used a couple shortcuts to make it easier, but they were still delicious!

 

Easy Pumpkin Pancakes

Easy Pumpkin Pancakes

2 cups whole wheat/whole grain pancake mix

2 eggs

1 cup milk

½ cup pumpkin puree

2 tsp pumpkin pie spice mix

1 cup water (use less or more depending on the consistency you want)

 

Directions:

 

Measure and pour all your ingredients in a large mixing bowl. Use your judgment on the water and make the batter to the consistency you like for pancakes.

 

You can use a large electric skillet or a regular skillet on the stove top. (If you are using an electric skillet, set the temperature to 350 degrees). Spray with cooking spray to prevent the pancakes from sticking.

 

Cook pancakes 2-3 minutes on each side. Serve with toppings of your choice.

100% Pure Maple Syrup

Earth Balance Buttery Spread

Fruit Syrups

Diced fresh fruit

Peanut Butter

Applesauce

Powdered Sugar
