Apple Crisp Cookies {My Own Recipe}

Today I’m sharing with you a new recipe that I invented! Apple season is just wrapping up, and I’ve been baking away. I love pie, bread, and crisp. What I didn’t have was a good apple cookie recipe, SO I decided to make my own! 🙂

I had my hubby taste them, and he ate half a dozen within 10 minutes! I knew then that they were a success! When he asked me what they were, I didn’t have an answer because I hadn’t even tried them yet.

The minute I bit into them, I knew exactly what they should be called! Though the name is super simple, it tells you exactly what you will be getting when you make these cookies.

I hope that you enjoy them as much as we have. We’re on the second batch in a week here. 🙂

 

Apple Crisp Cookies Ingredient List

 

2-3 Large Apples

2/3 C. Water

2/3 C. Shortening

1 1/3 C. Sugar in the Raw (Brown Sugar might work well too)

2 Tsp. Cinnamon

1/2 Tsp. Baking Soda

2 Eggs

2 1/2 C. Flour

2 1/2 C. Oats

 

STEP ONE

Peel, Core and Slice

STEP TWO

Chop the slices into bite size

STEP THREE

Place water and bites on stove.

Cook until tender (3-4 minutes)

Check frequently to avoid making applesauce.

STEP FOUR

Place shortening, sugar, cinnamon, and baking soda in bowl.

STEP FIVE

Mix ingredients until well combined.

STEP SIX

Add eggs, flour and oats to the sugar mixture.

STEP SEVEN

Add apples.

Gently stir all ingredients until well combined.

STEP EIGHT

Place tablespoons of cookie dough on an ungreased cookie sheet.

STEP NINE

Bake in a 375 degree oven for 10 minutes.

    Come on next week! Too bad I already spent this week’s budget. I love apple crisp and to have it in bite sizes… this may end out bad for my hips. I’ve never been excited to go to the store in all my life! lol
