Holiday time always looked a little different at my house growing up; we ate vegetarian! At Thanksgiving we didn’t have the huge turkey in the middle of the table, or the ham at Christmas. My mom would always make a delicious meal and I honestly never even noticed.
The dish I am sharing today: Sautéed Zucchini & Summer Squash is a very easy side dish that you could use for a delicious and healthy alternative at a holiday meal. It uses vegetables that you may have had in your garden over the summer. I think using vegetables from the garden at Thanksgiving time is one of the best ways to show Thankfulness to God for what He has blessed us with over the past year.
Sautéed Zucchini & Summer Squash
1 medium zucchini
1 medium summer squash
1-2 tbsp olive oil
1 tsp salt
½ tsp pepper
1 tsp Herbs de Provence
Directions:
Wash and cut off the ends of the zucchini and summer squash.
Slice the zucchini and summer squash in half, the halves in half, and then slice into half moon shapes.
Heat a sautee pan over medium high heat.
Add olive oil and allow it to heat up.
Add the zucchini and summer squash, salt, pepper, and herbs de provence.
Sautee until the zucchini and summer squash are soft and slightly browned.
Cool and serve!
My 15 month old daughter really enjoyed this dish too. She loves zucchini and literally ate all of the serving I gave her in 5 minutes! There are not a lot of ingredients because I think it is best to taste the freshness and deliciousness of the vegetables and not to smother them in too much seasoning or sauces. Don’t get me wrong, I love a good green bean casserole or corn casserole at Thanksgiving, but sometimes it is also good to just let the vegetables speak for themselves!

We love this combo! My crew likes onions added but I like them simple and plain. Comfort food at its finest.
