Jelly Bean Cupcakes
Ingredients/Grocery Shopping List
(1) Box of White Cake Mix ~ Water, Eggs & Oil Typically Needed
(or use the recipe below to make your cake mix from scratch)
(1) Container of Icing
28 oz. of Jelly Beans
WHITE CAKE MIX RECIPE
2. Cups All Purpose Flour
1 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/8 Tsp. Salt
1/2 C. Shortening, Butter or Margarine
1 3/4 C. Sugar
1 Tsp. Vanilla
4 Egg Whites
1 1/3 C. Buttermilk or Sour Milk (Create sour milk by adding 1 Tbls. Lemon Juice to Milk ~ let sit for 5 minutes to sour)
Step One
Follow your cake mix instructions. (Skip to step
Or
Mix dry ingredients from above recipe.
STEP TWO
Beat Shortening with mixer for 30 seconds.
Add Sugar, Vanilla and beat until well combined.
Add egg whites, one at a time, beating well after each.
Add dry mixture and buttermilk alternatively until mixed well.
STEP THREE
Mix jelly beans into the cake mix just prior to spooning into cupcake liners.
STEP FOUR
Bake at 350 degrees for 30-35 minutes.
STEP FIVE
Cool completely and finish off with icing and remaining jelly beans.
**Next time I bake these I will probably cut the jelly beans into quarters. Due to their weight they sunk to the bottom of the cupcake, as you can see in the above picture.**

my dh will love these. Jelly sweets and cake in one place. The kids won’t be totally against trying, either! lol

🙂 I hope they love it! As I said I recommend chopping the jelly beans into 4 pieces prior to stirring them in to prevent them from sinking to the bottom of the cupcakes. 🙂 Blessings!
